Hello Dolly Bars

  • 1/2 cup unsalted butter
  • 1 cup graham cracker crumbs
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 1 can (15 ounces) sweetened condensed milk

Preparation:

Melt the butter; mix in graham cracker crumbs. Pat crumb mixture in a 9-x13-inch baking pan. Sprinkle the remaining ingredients over the crumbs in order given, in layers. Drizzle the sweetened condensed milk over all. Do NOT stir. Bake at 350° for about 25 minutes. Cool and cut into bars.

Peanut Butter Popcorn

  • 1 roasting pan of popped popcorn
  • 1 ½ C. peanuts
  • 1 C sugar
  • 1 C peanut butter
  • ½ C light corn syrup
  • ½ C honey
  • 1 t vanilla

Place popcorn and nuts in roaster and place in 250-heated oven. Butter sides of a heavy 1 ½ quart saucepan. Combine sugar, honey, and corn syrup in pan. Bring to a boil stirring constantly. boil at a hard boil for two mins stirrying constantly. Remove from heat and add peanut butter and vanilla. Blend well. Pour over popcorn and nuts. Stire until well-blended. Let set and cool. Break into bite-sized pieces.
For reheating: Put desired amount of pieces into a bowl and let cook in a microwave for 10-15 second or until desired gooeyness is achieved.

Moose Munch

  • 9 cups Chex
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup butter or margarine
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

Sugar Cookies

Dry:
  • 3 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Creaming:
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 teaspoons vanilla extract
  • 1 teaspoon almond extract

Sift dry ingredients together set aside. Cream together butter and sugar until fluffy, beat in eggs, stir in extract. Blend in dry ingredients into creamed mixture until uniformed. Divide into two balls and wrap in plastic wrap. Chill for 2 hours. Keep in fridge until use.
Preheat oven to 350. Roll out dough to ¼ inch thickness and cut out with desired shapes.
Bake 6-8 mins or until center of cookie does not appear wet and edges are barely brown.

Icing:
  • 1 cup confectioners' sugar
  • 2 teaspoons milk
  • 2 teaspoons light corn syrup*
  • 1/4 teaspoon favored-extract (vanilla, almond, orange, whatever)
  • assorted food coloring

Stir sugar and milk together until smooth, beat in corn syrup, add extract. If icing is too thick, add more corn syrup.

*If light corn syrup is not available, you can substitute a sugar syrup made with 1-1/4 cups sugar and 1/3 cup water, boiled together until syrupy.

Orange-kissed Brownies

  • 1 brownie mix, with required ingredients*
  • 1 T orange extract
  • 1 C of semi-sweet chocolate chips


Mix all together and cook as instructed on the box. Line pan with foil for easy removal upon cooling.

*If you don't have a brownie mix on hand, a cake mix can be substituted along with the following ingredients:

  • chocolate cake mix
  • 1/2 C butter, slightly melted
  • 1/3 C brown sugar
  • 2 eggs
  • 1/4 C water
  • 1 t vanilla

Creamy Jello Pie


  • 1 small pkg of jello
  • 2 six oz of yogurt
  • 1 grahm cracker crust
  • 1 tub of whipcream

Dissolve jello in 1/4 cup of HOT water. Mix in yogurt. Fold in whip cream.
Place mixture in crust. Chill for three hours.

So far we have tried the following favors and here are our thoughts:
strawberry- not that great
strawberry banana - better than just strawberry
lemon- great!
lime- wonderful!
orange- yummy!

Washington Jello Salad


  • 1 six oz pkg of cherry jello
  • 1 can of cherry pie filling
  • 1 can crushed pineapple

Dissolve jello in 2 cups of boiling water, add in filling and pineapple, blend well, chill until set.
Top off with whipcream if desired.

Note: the mixture will not set solid like jello. It should be firm but has the appearance similar to mushed up cranberry sauce.

Cake Mix Cookies

  • 1 box of cake mix
  • 2 eggs
  • 1/3 C of oil
  • 1 cup of fillings

Mix ingredients together. Use a tablespoon to spoon dough onto a foiled cookie sheet. Bake for 7-9 minutes at 350. Let cool to set for 10 minutes.
