Roast & Potatoes with Gravy

ROAST
  • 1 good-sized roast (usually abt 3-5 lbs)
  • 1 pgk Roast Seasoning or Onion Soup Mix
  • 1 small onion, sliced-1 cup water

POTATOS
  • 3-4 Yukon Gold Potatoes
  • Butter
  • Milk
  • salt and pepper to taste

GRAVY
  • 1 pgk of Onion Soup Mix
  • 5 T Flour
  • 3 C liquid


Slit roast with a knife, pour seasoning over roast, rub in. Sear the roast in a frying pan. Place the roast in a greased crockpot, top with onions then potatoes. Add one cup of water.Cook on High for 6 hours or whatever works for your crockpot.
Six Hours Later…To make gravy, mix the flour and soup mix together, then place mixture into a sauce pan. Pour in the three cups of liquid from what the roast has produced or more or less based on your taste of consistency.Prepare mashed potatoes.

Beef and Broccoli with Rice


  • 1-2 cups of leftover shredded roast
  • 1 small onion
  • 3 cups of cooked broccoli
  • 2 cups cooked white rice
  • 1 cup of leftover beef gravy
  • seasoning- garlic salt, pepper
  • Optional: crunchy noodles

In a skillet stir-fry onion, broccoli, and beef with seasonings.Once veggies are tender, remove from heat place in a bowl.
Add warmed beef gravy to the mixture.
To Serve: Spoon mixture over white rice and top with crunchy noodles.

Beef Burritos

Meat. Taco Seasoning. Refried beans. Salsa. Cream cheese. Shredded Cheese. Zap in microwave. Wrap in tortillas.

Italian Subs


  • 1-2 cups of shredded leftover roast or half of an uncooked roast
  • 1 pkt of dry Italian dressing
  • 1 bag of frozen onions and peppers
  • 1/2 t of dried minced garlic
  • pepper to taste
  • shredded mozzarella cheese
  • sub rolls
Put the first four ingredients in a crock pot. Cook. Shred if needed. Fill sub roll with crockpot mixture and top with cheese.

Note: I also like to swipe the sub bun with a thin smear of mayo before filling.

Stronganoff



  • 1-2 cups of leftover shredded roast or half of an uncooked roast
  • 1 small onion, sliced
  • 1 cup of mushrooms, sliced (optional)
  • 1 can of cream of mushroom
  • 2 cup of sour cream
  • 1 envelope of onion soup mix
  • salt and pepper to taste
  • 1 pkg of egg noodles, cooked al dente

Place onions, mushrooms, and beef in greased crock pot. Cook. shred meat when done and return to crock pot. Mix the soup, sour cream, seasonings and spoon sauce over onions and meat. Cook on High for 45 mintues. Toss the cooked noodles into the crock pot and fold in. Stir well and then serve!
For freezing, don't include noodles.
