Salad Stuffed Cucumbers

Original Recipe:
1 8 oz package Neufchatel Cheese*
2 5 oz cans boneless, skinless salmon, drained
3 regular cucumbers, peeled and seeded
salt and pepper to taste

Altered:
1 oz pack of cream cheese
2 cans of tuna, drained (or canned chicken)
3 cucs
salt, pepper and dill to taste
a splash of lemon juice

Mix softened cheese, tuna, seasoning. Prepare cucumbers by slicing in half lengthwise and scooping out seeds. Fill create cavity with salad.

Simple Sesame Noodles

  • 12 ounces, fluid Thin Noodles (like spaghetti) Cooked And Drained
  • ¼ cups Soy Sauce
  • 2 Tablespoons Sugar
  • 4 cloves Garlic, Minced
  • 2 Tablespoons Rice Vinegar
  • 3 TablespoonsSesame Oil
  • 4 Tablespoons Canola Oil
  • 2 Tablespoons Hot Water
  • 4 whole Green Onions, Sliced Thin
"Whisk all ingredients (except noodles and green onions) together in a bowl. Taste and adjust ingredients as needed.
Pour sauce over warm noodles and toss to coat.
Sprinkle with green onions and toss.
Serve in a bowl with chopsticks. Yummy!"

NYAJ's Bread Dip

  • 1 oz. Grated romano/parmesan cheese
  • 1 pinch Crushed red pepper flakes
  • 2 fl oz. Olive Oil Blend or Extra Virgin Olive Oil
  • 0.5 tsp Chopped garlic

Combine grated cheeses and red pepper flakes together. Add garlic and oil and mix well.

Serve with bread.

Roasted Cauliflower

  • 1 head of cauliflower
  • 2-3 cloves of garlic, peeled and coarsely minced
  • 2 T Lemon juice
  • Olive oil
  • salt & pepper
  • Parmesan cheese, grated
Place prepared florets into a single layer in a casserole dish.
TOSS in garlic.
SPRINKLE with lemon juice, salt and pepper.
DRIZZLE with olive oil.
PLACE in oven at 400 for 25-30 min or until tops of florets are lightly brown and can be pierced with a fork with ease.
TOP WITH Parmesan cheese.

*Can be processed into a soup easily.

Spinach Poppyseed Salad

Poppy Seed Dressing


  • 11/2 Tbsp poppyseed
  • 1/2 cup white vinegar
  • 1 cup vegetable oil
  • 3/4 cup sugar (add to taste)
  • 1 tsp. salt
  • 1 tsp. dry mustard


-OR- just buy a bottle of dressing at the store

  • baby spinach leaves
  • 1 head red leaf lettuce
  • sliced mushrooms
  • sliced red onions
  • cook 1 package of bacon
  • shredded swiss or mozerella cheese


Prepare spinach, lettuce, mushrooms and onions. Add bacon crumbled and cheese just before you drizzle the poppy seed dressing on. Toss and serve immediately.

Baked Potato Salad

  • 3-4 baked potatoes, cubed
  • 2 green onions, diced
  • 4 bacon slices, crumbed
  • 2 spoonfuls of mayo
  • ½ of sourcream
  • dill weed
  • 1 T of ranch dressing mix
  • salt and pepper to taste

Mix in a bowl. Chill for two hours. Stir and serve.
